Brioche French Toast & Berry Compote

Brioche French toast with a warm mixed berry compote and cool whip! If you’ve never tried Brioche bread, you need to! The French definitely know what they are doing when it comes to bread. I got to use my fragrant sugar which I typically reserve for my chai and holiday baking. In an air tight container, for every cup of sugar I add 4 cloves, 1 star anise, and 1 cinnamon stick. Over time the flavor of the spices combine with the sugar and lend a subtle but lovely taste and fragrance to whatever you use it in. *Recipe* - 2 slices of Brioche bread - 2 eggs (1 large) - splash (2 T) of milk - 1 t vanilla extract - 1/4 t cinnamon powder Berry compote - 1 c mixed berries frozen or fresh - 2 T water - 1 T lemon juice - 2 t sugar (fragrant or regular) • In a pot add your berries, water, lemon juice, and sugar and bring to a simmer and cook until berries are soft and sauce becomes thick (about 10 mins) • In a shallow bowl whisk your eggs, milk, vanilla, and cinnamon. Place your bread slices in the egg mixture and 15 seconds later flip to other side so they are well soaked. • In a pan melt some butter. Then place your soaked bread slices in the pan with bubbling butter and cook on each side for 2-3 mins until golden. • Place your French toast on a plate and drizzle on top your warm berry sauce and top off with a few dollops of cool whip and you are good to go. You can sprinkle on some powdered sugar for added sweetness and a pretty picture but I opted out since this already quite indulgent ☺️
