Creamy Cheese Sauce

What do you call cheese that isn’t yours? Nacho cheese 😎 Nachos don’t really need a recipe but my cheese sauce sure does!
*Recipe* - 2 T butter - 2 T flour - 1 cup of cold milk - 1/4 t salt - 1/2 t cayenne pepper - 8 oz block of sharp cheddar cheese
• Melt the butter in a skillet over medium heat. Once it’s melted add your flour and whisk until it becomes a well combined paste. (3-4 mins) This is a roux! • To that whisk in your cup of cold milk, salt, and cayenne pepper. Hot roux + cold milk = no lumps. This will thicken up your sauce. Once it’s thoroughly heated and bubbling, add in your cheese. I prefer grating my cheese freshly because did you know they add some kind of substance to grated cheese to prevent it from clumping? Grate your own cheese and it will make all the difference! Pour generously on top of your nachos and load on any other toppings you like and munch away. I like to add seasoned beef, lettuce, homemade salsa, chili sauce, and sour cream!
