Curd Rice

There seems to be a stomach bug going around so I thought I’d put out this emergency curd (yogurt) rice or dahi chawal or thayir sadam recipe to help anyone who has an upset stomach. Curd rice is easily digestible and promotes the growth of healthy gut bacteria aka probiotics! It’s rich in antioxidants and therefore helps you fight off infections. The mustard, curry leaves, and asafetida also immensely helpful for gut healing. Best part? It tastes amazing! There are about 7,000 ways to make this. This is just my very simple and fast way to make it when you are in a pinch.

*Recipe* - 1 c cooked rice (White/brown/quinoa) - 1/2 c plain yogurt - 1/2 t salt - 1 T oil/ghee - 1 t mustard seeds - 1 t masoor dal/orange lentils (optional) - 1/4 t asafetida - 1-2 small whole red chilis - 4-5 curry leaves

* Take your cooked and heat in the microwave for a minute. To it add your salt and yogurt and mix well * For the tempering, heat up your oil/ghee. Once hot, add the mustard seeds and curry leaves and let them cook for a few seconds. Then add your lentils, red chilis and asafetida and cook on a lower flame until the lentils change color to a light brown. * Pour the tempering over the rice and mix well. * You can garnish with cilantro leaves and pomegranate seeds.
