*Recipe* - 1 lb. chicken breast, cubed - 1 T butter - 1 onion, finely chopped - 1 in. piece of ginger, minced - 2 cloves of garlic, minced - 2 c rice, cooked the night before - 1 c frozen mixed vegetables - 2 T vegetable oil, divided - 3 T low sodium soy sauce - 1 T chili garlic sauce - 1/4 c green onions, finely chopped
1. In a large skillet, heat up 1 T of oil and cook the chicken. You can use any leftover protein you have on hand (chicken, shrimp, tofu, beef). Set aside. 2. Heat up 1 T oil. Add the ginger and garlic and sauté for 1 minute. Then add the chopped onions and cook for 2-3 mins or until softened. Add the frozen mixed vegetable and cook for another 2 minutes. 3. Stir in the cooked rice and when it starts to brown, add the soy sauce and chili garlic sauce and mix well 4. Push everything off to the sides and create a well in the center. Add the beaten eggs and cook over medium heat until just firm. Using the spatula, cut into smaller pieces and combine with the rice. 5. Sprinkle on top the green onions and serve right away.
