Gajjar Ka Halwa

Kicking off Diwali week with one of my all time favorites, gajar(carrot) ka halwa! You can reduce the amount of sugar you use if you so choose. But remember this festival favorite is meant to be decadent, indulgent, and soul soothing.

*Recipe* - 8-10 Carrots - 5 T Ghee - 2 c Milk - 1/2 can of Condensed milk - 1/2 c Sugar - 1/4 t Cardamom powder - 1/4 c chopped Cashews - 1/4 c Raisins • Peel and grate your carrots. • In a pan add 1 T ghee. To it add the chopped cashews and raisins. • Cook until they are lightly toasted and set aside. • Heat a nonstick pot and 1 T ghee and your shredded carrots. Cook and stir for about two minutes ensuring they don’t stick to the pot. • Add 2 cups of milk so the carrots are just covered and half a can of condensed milk. Bring to a boil and stir occasionally until the milk evaporates (10-15 minutes). • Add half a cup of sugar and stir until the sugar melts. • Add in 3 T of ghee, toasted cashews and raisins and cook for another 7-8 mins. When the ghee separates from your carrot mixture, your halwa is ready! . You can serve it right away with a scoop of vanilla ice cream or store it in a glass tray in the fridge until you are ready to serve. Heat it up before
