When it comes to the variety of vegetarian/vegan options, no other cuisine compares to Indian. You miss meats way less because of all the notes these vegetarian dishes hit on your palate. Kappa and Thairu chammanthi aka boiled yucca and chili yogurt chutney! The chili used is called a bird’s eye chili or Kanthari. They are tiny little guys but they pack a lot of heat! They also carry numerous health benefits. Like did you know one chili contains 7 times the vitamin C of an orange?! Tapioca is a great source of dietary fiber which keeps you full longer on fewer calories. Be sure to boil your tapioca for 15-20 mins or until soft. This vegetarian meal can easily be made vegan by taking out the yogurt and instead adding coconut oil and a splash of vinegar. It’s basically the most trendy food without even trying.
