Happy Diwali! ✨Here are two ladoo recipes that take no time at all to make so you can spend the least time in the kitchen and more time celebrating without compromising on flavor. One is indulgent and one is quite healthy. So there’s something for everyone! . . Coconut Rose Ladoo - 1 c desiccated coconut for ladoo & 1/4 c for coating - 1 T ghee - 1/2 can condensed milk - 3 T Rose Syrup - 1/4 t cardamom powder - 2 T finely chopped pistachio for coating • Mix the 1/4 c coconut and chopped pistachio for coating. This will be enough for both ladoos • In a nonstick pan, melt your ghee. • Add in your coconut and cook for 1 minute on low heat. • Add in condensed milk and rose syrup. Mix and cook for 3 mins until well incorporated. • Add in the cardamom powder and remove the mixture from the stove. • Let it sit for 5 mins or until cool enough to touch. • Take a small amount and make into a round shape. Then roll in the coconut and pistachio mixture until covered well. • Keep in the fridge for an hour so the ladoos become a little firm. Dates ladoo - 1 c Medjool dates - 1/4 c Cashews - 1/4 c Almonds - 1/4 c Raisins - 1 T coconut oil - 1/4 t vanilla • In a pan, melt your coconut oil.

• Add in your cashews, almonds, raisins, and lightly toast for 2-3 mins. • In a food processor, add your dates, vanilla, and toasted nuts and raisins and process until well combined. • Take small portions and make into round shapes the size of ping pong balls. • Roll them in the coconut and pistachio mixture until well coated. These dates ladoos are great for any time of the year. They pack a lot of energy and protein. They have no added sugar and they are delicious. You can even add in some semi-sweet chocolate morsels for some added sweetness.
