Masala French Toast

This masala French toast is quite the discovery!

Savory French toasts are something I need to delve into more. Egg is so versatile. There are a whole host of things you can do with eggs. I feel like I need to start a series on what the incredible egg is capable of doing. But for now, I'll just share the recipe for this beauty!


*Recipe*

- 4 large eggs

- 2 T milk

- 4 slices of bread of your choice

- 1/2 onion, finely chopped

- 2 T chopped tomatoes, finely chopped

- 2 T chopped bell pepper (any color), finely chopped

- 1 green chili, finely chopped

- 3 sprigs of cilantro, chopped

- 1/2 t red chili flakes

- 1/4 t black pepper

- salt to taste

- 1 T butter


1. In a bowl, whisk your eggs and milk.

2. To that add your sliced veggies. This dish is totally customizable so you an add whatever veggies you like.

3. Once mixed well, add your chopped cilantro, chili flakes, black pepper, and at last salt.

4. In a frying pan, melt some butter on medium heat. In the meantime, soak a slice of bread into your egg mixture making sure every crumb is smothered in egg and then place into the pan with melted butter. Spoon some of the chopped veggies on top of your slice of bread. After a minute, flip and cook the other side.

5. Plate and serve with a cilantro-mint chutney and a side salad.
