New York Cheesecake Waffles

“Psst...do you have a waffle iron?” asked my friend Sneha during church. I stared at her puzzled. “Food is just always on my mind,” she replied. Me too, girl. Me too. Today I have on my mind these unbelievably delicious New York cheesecake waffles with some fresh blueberries! If I’m not thinking about what to eat for my next meal, I’m thinking about what new recipe to try out based on what’s on sale at Aldi . To me, food is truly magical. It’s amazing that a few ingredients can be transformed into one thing, while half way around the world, they can me made into something completely different. The survivors of the Grenfell tower fire came together and created a cook book that showcases each families individual tastes and showed the world how to unite in the face of adversity. So, whether you eat or drink, or whatever you do, do all to the glory of God. 1 Corinthians 10:31


*Recipe*

- 8 ounces cream cheese, room temperature - 2 eggs, room temperature

- 1 t lemon juice - 1 teaspoon vanilla extract - 1/4 cup granulated sugar - 1/2 cup cake flour (or soft winter wheat flour such as White Lily) - Pinch of salt - Cooking spray - Powdered sugar


1. In a large bowl, add your cream cheese and eggs and beat with an electric mixer until smooth. Then add in the lemon juice, vanilla and, salt until mixed


2. Sift in the flour and sugar into the mixture and mix again for another 2 minutes. While your batter rests, allow your waffle iron to heat up.


3. Once hot, pour 1/2 c of batter into your waffle iron. The amount you pour and how long it takes to cook, varies with each waffle iron. Add small amounts at a time so the batter doesn't overflow.


4. Once done, dust them with powdered sugar or any other topping of your choice.
