Plantain Energy Bites

Seasonal affective disorder is real, folks! Although it’s the beginning of a new year and motivations were high, around this time everyone feels that lull. Ugh. Just saying that word makes me feel sluggish. While I can’t change the weather or your situation. These natural energy bites can definitely help.
*Recipe* - 3-4 very ripe plantains - 1 T ghee/coconut oil - 1/4 c shredded coconut - 1/4 c chopped cashew - Handful of raisins - 1/4 t cardamom powder (optional)
* In a pan, heat up some ghee and roast the coconut flakes until golden brown. * Then add the chopped cashews and raisins and lightly toast them. * Mash your plantain with a fork or wooden spoon. The more ripe they are, the sweeter your energy bites will be. * Add the mashed plantains to the pan and mix well. Cook for about 5-7 mins until well combined. * Add the cardamom powder not only to enhance the taste but also for its gut-healing properties. * Taste the mixture. At this time of if you would like you can add a sweetener of your choice. For me the sweetness of the plantain was enough. * Let the mixture cool and then roll into balls. Refrigerate for up to a week.
