B-A-N-A-N-A-S for Banana Bread

It’s Friday and that calls for celebration! Had some overripe bananas that were perfect for banana bread. In this recipe I included two things all people from Kerala love: cashews and coconut.
*Recipe* - 3-4 ripe bananas, smashed - 1/2 c butter - 3 eggs beaten - 1/2 cup of sugar (I prefer it not as sweet, you can use 3/4-1 c) - 1 t vanilla extract - 1/2 t cinnamon - 1 t baking soda - 1/2 t salt - 2 cups of flour - 1/2 c chopped cashew (optional) - 1/4 c of shredded coconut flakes(optional)
•Preheat oven to 350°F. Mash your bananas with a fork in a large mixing bowl. Mix in your eggs, sugar, and vanilla. Sift in your salt, baking soda, cinnamon, and flour. Add your cashews and half of the coconut (or chocolate chips if that’s more your taste) and gently mix. Pour mixture into a greased pan and bake for 1 hour. Garnish with the remaining coconut flakes.
