Linzer Cookies

Day 4 I’m bringing you Linzer cookies! These jam filled almond sandwich cookies melt in your mouth! They are the perfect combo of sweet and tart. You’ve got to try them for yourself! *Recipe* - 150 g softened butter - 60 g powdered sugar - 1 egg white - 220 g flour - 1 t vanilla - Pinch of salt - 60 g almond flour - 1/2 t almond extract - 1/4 c jam of your choice
1. In a large bowl, cream your softened butter until fluffy and smooth. Add in the powdered sugar combine. Add in the egg white and vanilla and combine. 2. Add the flour mixture in thirds to ensure everything is well combined. Add your pinch of salt and mix. 3. Add your almond flour and almond extract and combine well. 4. Place the dough between 2 sheets of parchment paper and roll out to 1/4 in. thickness. Allow the dough to cool for 2-3 hours in the fridge. 5. Cut out equal number of bases and tops with the cutout shape of your choice. Linzer cookie cutters can easily be found on @amazon. 6. Bake in a preheated 340F oven for 14 minutes. Bake the tops with the cutouts for about 11-12 minutes. They will bake faster. 7. Allow the cookies to cool completely. Dust the tops with powdered sugar. Place a 1/2 t of jam in the center of the base cookies and sandwich together with the powdered sugar coated tops.
