Butter Cookies & Sugar Cookies

Day 3 brings piped butter cookies and vanilla sugar cookies. Do you remember those blue tins with your favorite butter cookies? Well these will definitely bring memories of those flooding back!


*Recipe* Basic butter cookie dough - 300 g softened butter - 120 g powdered sugar - 1 large egg white - 360 g of flour - 1 t vanilla - Pinch of salt Sugar cookie dough - 50 g flour - 1/2 t vanilla

1. In a large bowl, cream your softened butter until fluffy and smooth. Add in the powdered sugar combine. Add in the egg white and vanilla and combine. 2. Add the flour mixture in thirds to ensure everything is well combined. Add your pinch of salt and mix. 3. Divide your dough in half. Add half the dough to a piping bag fitted with the tip of your choice and pipe into circles on a parchment lined baking sheet. Bake for 14 mins in a 340 F preheated oven. Then cool on a wire rack. 4. To the other half of the dough add the 50 g flour and 1/2 vanilla and mix well. 5. Place the dough on a piece of parchment paper. Put another piece on top and roll out to 1/8 of an inch thickness. Place in the fridge and let it chill for 2-3 hours. 6. Using cookie cutters, cut into the desired shape and decorate with icing and sprinkles or leave as is. Make sure the cookies have cooled down completely before decorating.
