This time of the year is filled with frantic activity. Baking cookies, shopping, wrapping presents, visiting friends, and the list is quite endless. Take time to slow down and step away from the constant doing, to find rest in the stillness of the Lord. To find rest in worship.
Day 2 brings two variations of chocolate cookies: with a milk and white chocolate drizzle and with a Nutella filling.
*Recipe*
- 1 c unsalted butter, softened
- 1 c powdered sugar
- 1 1/2 t vanilla extract
- 1 egg, room temperature
- 2 c and 2 T all purpose flour
- 1/2 c unsweetened cocoa powder
- 6 T hot milk
- 3/4 t baking powder
- 3/4 t salt
1. Cream together the butter and sugar until smooth. Add in the egg and vanilla extract and mix well.
2. In another bowl sift the flour, salt, and baking powder.
3. Bloom the cocoa powder with the hot milk and mix until a smooth paste forms.
4. Gradually add the flour mixture and alternate with the cocoa paste until everything is combined well.
5. On piece of parchment paper scoop out half the sticky dough on. Place another parchment paper on top and roll out to 1/4 in. using a rolling pin. Do the same with the other half of the dough.
6. Chill in the fridge for 2-3 hours.
7. When ready to bake, remove from the fridge, use the cookie cutters to cut out desired shapes and place on a parchment lined baking tray.
8. Bake in a 350 F preheated oven for 15-17 mins.
9. Allow cookies to cool completely before decorating.
