Baked Tuna Casserole

Bringing you another casserole! this time a tuna pasta bake. So hearty and tasty. Perfect for a Friday dinner meal if you are staying at home. Heck, it's perfect any day of hte week. I apologize for the picture in artificial light 🙈

*Recipe* - 1 medium onion, chopped - 3 cloves of garlic, roughly chopped - 2 T oil - Chili flakes (optional) - 2 - 10 oz cans of tomatoes - Handful of fresh basil/ or T dried basil - 10 oz any short pasta - 2-5oz cans of tuna - 1 c shredded cheese - 1/2 c olives, chopped

* In a large saucepan, heat up your oil. Once hot, cook your chopped onions, garlic, and chili flakes until the onions have softened. * Add your canned tomatoes and some fresh basil, and bring to a boil. Season with salt and pepper. Add your drained tuna and olives. You can reserve some of the olives to garnish on top. Then turn down to a med-low and simmer for at least 20 minutes. * Meanwhile, boil some generously salted water and cook your short pasta according to the directions on the box to the lower range of time. i.e. if it says 9-11 minutes, cook your pasta for 9 minutes. That way it won’t be over cooked before you bake it in the oven. * Reserve some of the pasta water then drain your pasta and add it to your sauce mixture. Add 1-2 T of the pasta water as need to make the sauce to your liking. * Preheat the oven to 400 F * Transfer the contents to a baking dish and layer on as much or as little cheese as you like. You can garnish the top with some olives and fresh basil if you like. Drizzle on top just a little bit of high quality olive oil. This is optional. * Bake uncovered for 15 mins, just until the cheese starts to bubble up.
