Blackberry Ricotta Flatbread

When the entire world is trying to cut out carbs from their diet, here I am looking for more ways I can load up on them. But seriously guys, this little sweet and savory flatbread is so quick and easy to make and it is DELICIOUS! Blackberry ricotta flatbread with basil
- 1 naan - 1 packet of blackberries - 1 T olive oil - Ricotta cheese - Fresh mozzarella - Fresh basil leaves - Small red onion thinly sliced
* Pre-heat oven to 400°F * Place your naan on a baking sheet. Brush on the olive oil all over the naan. * Take a few blackberries and using a fork, mash them. Spread your mashed berries on top of your naan. * Rip off some fresh mozzarella and place on top. Spoon ricotta cheese over the naan in random places. * Place as many blackberries as you want on top. * Bake in the oven for 10 mins. or until your cheese has melted. I like to broil mine for a minute or two just until the cheese bubbles. * Now is the time to put basil. The fresh taste of the herb pairs perfectly! We’re going to chiffonade. Just a fancy word for slicing. Stack your basil leaves on top of each other. Roll them up and cut thin slices and garnish on top of your flatbread. * Cut into slices and enjoy! It may be just the thing that convinces you to start eating carbs again.
