Thai Noodle Salad

Are you looking for a "clean your fridge out" meal that's nutritious, delicious, and easy to make? This Thai noodle salad with a creamy peanut honey dressing is just what you need to make. its customizable to your tastes. Allergic to peanuts? Use almond butter. Allergic to almonds? Use tahini.
You can eat it hot or cold. Add whatever veggies you want, add any toppings you want, and eat it whenever you like!
*Recipe*
- 6 oz of Lo Mein noodles
- 2 c purple cabbage, sliced
- 1 red bell pepper, sliced3 scallions
- Bunch of cilantro, chopped
- 1/4 c peanuts, roasted and chopped
Honey Peanut Dressing
- 3 T honey
- 3 T lime juiceJuice of half an orange
- 1/4 c peanut butter
- 1/2 t cayenne pepper
-1/2 t salt
- 2 T soy sauce
-3 T sesame oil
* In a measuring cup, whisk all of your sauce ingredients until combined.
* In a large bowl add the cooked noodles, veggies, peanuts, and herbs. Pour in your peanut sauce dressing and toss until everything is evenly covered.
