Vegan Tuna Salad Sandwich

If you are trying to incorporate more plant-based foods into your diet, then man oh man do I have a recipe for you! This no-tuna salad sandwich is INSANELY delicious and only requires 5 ingredients!
*Recipe* - 1-15.5 oz. can of chickpeas (garbanzo beans) - 2 T vegan mayo - 1/4 c chopped dill pickles - 5-6 sheets of nori seaweed processed (optional: you can substitute it with 1 T of spicy or Dijon mustard) - 1 t lemon juice
1. In a food processor, process your sheets of nori. To it add a can of drained chickpeas, mayo and chopped dill pickles, and lemon juice until you are left with a coarse mixture. If you don’t have a food processor you can mash the chickpeas with a fork and add the rest of the ingredients to it. 2. Leave in the fridge for 2 hours.
That’s it! Spread it onto a slice of bread topped with veggies of your choice. Works really well for meal prepping.
