Lentil and Veggie Nuggets

I’ve got an easy recipe for you that is kid friendly yet filled with nutrients. If you are looking for vegetarian recipes, wanting to cut down on meat consumption, or just want to introduce new foods to your kids, this is definitely one way. These are lentil and veggie nuggets that are baked in the oven.

Get your kids involved in the cooking process and get excited about food. Allow them to help you by getting and measuring ingredients, mixing things, and shaping the nuggets. Get them involved in the cooking process to not only teach but get them excited about food and mealtimes. Sure they might make a mess and the results may not be perfect. But as Kathryn from @doitonadime says “a done something is better than a perfect nothing.”

You’re going to look back on this time fondly; I guarantee it!


*Recipe*

  • 1 c red split lentils, soaked

  • 2 potatoes boiled and grated

  • 1 carrot/zucchini, grated

  • 2 slices of bread

  • 1/2 c peas/corn or steamed broccoli

  • 1/2 c grated cheddar cheese

  • 1 t salt

  • 1/4 t black pepper

  • 1/4 t turmeric powder

  • 1 t poultry seasoning or dried herbs of your choosing

  1. Wash and soak your lentils for 4 hours or overnight in cold water.

  2. Boil and grate two potatoes.

  3. In a food processor, break apart 2 slices of bread and process until you get a crumb like consistency and set aside.

  4. Drain the lentils and add to a food processor along with the grated carrot/zucchini. Process until you get an even coarse mixture that is well combined and then add to a large bowl.

  5. To the lentil mixture add the bread crumbs, grated potatoes, cheese, turmeric, salt and pepper, salt and pepper, and peas/corn/steamed broccoli. If you are adding broccoli make sure it is chopped into small piece or you can process it with the lentils in step 3. Mix all the ingredients well.

  6. This next step you can have your kids help! Make small balls and place on a parchment lined baking tray, leaning an inch of space between each one. Using the back of a spoon press down gently and round out the edges of your nugget.

  7. Bake in a 400°F preheated oven for 25-30 mins. Let them cool for 10 mins. Serve with a side of ketchup for kids and sriracha mayo for adults.
