Chicken & Biscuit Casserole

We had family come into town this week, so we celebrated Christmas a few weeks early. I made this chicken and biscuit casserole which I think everyone really liked! Right? Family? Feel free to leave comments about it. I left it in the oven a tad longer than I should have which is why it has an extra golden color 😅 but no shame in that! *Recipe* - 3-4 bone-in chicken thighs - 2 T butter - 1 c yellow onion, chopped - 1 T garlic minced - 1/2 c celery, diced - 1/2 c carrots, diced - 1/2 c cut green beans - 1/4 t dried thyme - 4 c chicken broth - 2 T ice cold water - 2 T corn starch - 1/4 c heavy cream or milk - Worcestershire sauce - fresh parsley, chopped - Salt and pepper Biscuits - 2 c flour - 1 T baking powder - 1/4 t baking soda - 1 t salt - 4 T cold unsalted butter - 2/3 c grated Gruyere cheese - Freshly chopped parsley - 1 c milk . . • Pre-heat oven to 400°F • Season your chicken thighs with salt and pepper and roast in the oven for 30-40 mins. Let it rest for 5 mins and then shred with a fork. • In a large pot melt some butter on medium heat. Add in your onions, garlic, carrots, celery, and green beans and cook for 7 mins covered until the beans are cooked. Season with salt and pepper. • Add your chicken stock and bring to a simmer. Meanwhile, in a bowl mix the corn starch and cold water to make a slurry and add to your broth mixture and mix well. To it add your cream/milk and 2-3 splashes of Worcestershire sauce. Once thoroughly heated, add the freshly chopped parsley. • In a large bowl add the flour, baking powder and soda, salt and mix. Add the butter and using your hands combine with the flour and make a crumbly mixture. Add the grated Gruyere cheese, parsley, and milk and mix until you get a sticky dough. • Let it rest for 5 mins. • Pre-heat oven to 425°F • Pour your chicken mixture into a casserole dish. • With a cookie scoop, scoop the dough on top to cover the mixture and bake for 35 mins. You can make the chicken mixture ahead of time and the biscuits before you are ready to bake.
