Chicken Quesadilla

It’s Super Bowl Sunday! Now I have to be completely honest. I’ve never actually ever watched one....eek!😳 Some friends were telling me that more than watching the game, its about the enjoyment of each others company the community (sometimes competitive) spirit it brings. And the best companion for good company is good food! I have an easy peasy chicken quesadilla that is perfect if you’re thinking about bringing something to a friends house. It’s fast and uhhh did I mention it tastes even better than the one from Taco Bell? Omit the chicken to keep it vegetarian friendly.
- 1 bone-in chicken breast - 1-12” Burrito Flour tortilla - 1 T Ranch Dressing - 1 t taco seasoning - 1/4 c shredded cheese - 1 t butter - Salt and pepper * Preheat your oven to 425° * Season the outside of your chicken breast with a little salt and pepper. Place on a baking sheet and bake for 35-40 mins or until your chicken is cooked through * In a small bowl mix your ranch and taco seasoning. Sauce = done * When the chicken is cooked, pull it apart with a fork into shreds. * On a pan melt your butter on med heat. Spread your sauce generously on half of your tortilla. Place on the pan Layer on top of the sauce your cooked chicken and shredded cheese. Fold over your tortilla and cook until both sides are golden brown. Cut into 4 parts and serve with sour cream or salsa. Who are you rooting for?
