Matthew 28:6
In keeping with tradition, we're having Appam and Stew today!
*Recipe*
- 1lb chicken with bone in, cut into small pieces. Washed and drained
- 1 T Coconut oil + 1 t coconut oil
- 2 cloves
- 1 in piece of cinnamon
- 2 cardamom pods
- 1 bay leaf
- 1 onion, sliced
- 1 potato, cut into small cubes
- 1 carrot, cut into small cubes
- 2 green chilis, slit + 2 chopped
- 1 in ginger, julienned + 1 t ginger finely chopped
- 2-3 clove of garlic, sliced
- 1 c water
- 2 sprigs of curry leaves
- 1 can of coconut milk
- salt to taste
- 1/2 t black pepper
- 2 c water
* Into a pressure cooker, add your chicken, 1 t chopped ginger, sliced garlic, chopped green chilis, 1 sprig of curry leaves, and 1/2 t salt. Mix well and let it marinate for 20 mins. Add about 1/4 c water and cook on a medium heat until you hear 3 whistles. If you don't have a pressure cooker, cook the chicken covered on medium until full cooked, stirring occasionally.
* In a large pot, heat up 1 T of coconut oil. When hot, add the whole spices (cloves, cinnamon, cardamom, and bay leaf) and sauté until aromatic. Then add your sliced onions and a pinch of salt and cook just until they soften a bit. Add your cubed potatoes and carrots and mix well. Add a cup of water and cook covered for about 5 mins.
* Pour half a can of coconut milk into a bowl and add a cup of water and mix well. Add this mixture into your half cooked veggies and mix well. Bring to a boil and let simmer for about 7-10 mins or until your veggies are fully cooked.
* Add your cooked chicken into your veggies and mix well. Check for seasoning and adjust accordingly.
*Once everything is to your taste, add some curry leaves and 1 t coconut oil. Turn off the heat and add the remaining thick coconut milk to the curry. Sprinkle on some freshly cracked black pepper for an extra depth of flavor.
* Serve with the appam of your choice!
