One Pot Pasta

There is something to be said about a dish that looks good even before it’s cooked. All the produce came from the backyard garden!🌱🍽 This one-pot pasta is exactly the kind of thing all you busy folks need for a midweek dinner. It’s fast. It’s wholesome and customizable to your taste. And best of all it’s easy. Who wants to clean a bunch of dishes after a long day? My Italian sister-in-law probably thinks this is sacrilegious 🙈but I promise you it tastes great. . . *Recipe* - spaghetti (about a 1/4 of the box or a fist-full?) - a small onion thinly sliced - 1 c cherry tomatoes sliced in half - bunch of basil - 3-5 cloves of garlic thinly sliced - 1-2 red chilis (you can take out the seeds if you don’t prefer it too spicy) thinly sliced - salt and pepper to taste - 2.5 cups water . . • Put all your ingredients into a pot that has high sides. Turn your heat to a medium high and bring to a boil. Cook for 10 mins until the pasta is cooked and much of the water has evaporated leaving a sauce. Stir throughout to prevent from sticking to pan. Remove from heat and add some grated Parmesan cheese. This is completely optional but I added a splash of heavy cream to make it even more creamy. You can even add some cooked bacon or shrimp to take this dish to the next level.
