Open Faced Breakfast Pie

The sun is up and shining again on a new day, just like the egg in this open-faced breakfast pie! I used the leftover pie crust from an earlier recipe which I rolled out and cut into squares. Since this was just for me, I just made one with an egg. But imagine having a breakfast pie station at your next brunch! Lay out different toppings like veggies, bacon, and cheese. Or if you’d like to go the sweet route: fresh fruits and chocolates. The possibilities are endless!
• Fold over the outside quarter inch of your pie square so your ingredients don’t run over. Bake in the oven for 375° for 15 mins. They can all go in at once and everyone can enjoy their individual pies together.
