Potato, Egg, & Sausage Casserole

After ringing in the new year, we’re all sure to sleep in. Take the worry of what to eat in the morning with this Tex Mex Egg casserole. It’s been an indulgent holiday season, and I want to make sure I end on that same high note.

My mom says this all the time. Translated: What you must do tomorrow, do today. What you must do today, do now. I have a habit of planning change but often don’t get around to implementing it. Every Sunday I tell myself that on Monday I’m going to work out. And the next time I think about it, another Sunday has rolled around. So whatever goal, resolution, change you are seeking this new year, start doing it today. What are you afraid of? That you’ll reach your goal a day early? And maybe 2 days later you fail. That’s fine. Because every day is the start of a new year.
*Recipe* - 1-16 oz breakfast sausage roll. - 4-5 potatoes, peeled and diced - 1 T oil - 1 bell pepper, finely chopped - 2 white onions, finely chopped - 1 T garlic, minced - 1-8 oz can of tomato sauce - 3 T Taco seasoning - 6 eggs - 1/2 c half and half/milk - 1 c Colby Jack cheese/ shredded
* Brown your breakfast sausage. * Add your taco seasoning and cook for 1 min. * Add the tomato sauce and cook covered for another 3-4 mins. Remove the mixture from your skillet. * In the same pan, heat up some oil. Cook your onions, garlic, and bell peppers. Until soft. * In a large pot fill half way with cold water and add your diced potatoes. Season well and boil for 5 mins. Drain and set aside. * Time to assemble. Grease the bottom of your casserole dish. Pour and spread your sausage mixture and then follow with your onion mixture. Dump your cooked potatoes on top. Sprinkle on your cheese. * In a bowl crack 6 eggs and add your milk. Whisk and season with black pepper. Pour your eggs on top. Cover and keep in the fridge overnight. * In the morning place your uncovered casserole dish into a 375°F oven and cook for 35 mins. * Serve with some pico de Gallo, sour cream, or avocado slices.
