Sausage, Kale, and White Bean soup

After a very indulgent weekend, I could really use this white bean, kale, and sausage soup to help get me back on track. I know you’ve all heard of intermittent fasting, but this week I’m teaching myself intentional fasting. There are some things that are weighing heavy on my heart for which I’m seeking clarity. Have you fasted before? What has been your experience?
*Recipe*
- 1 T vegetable oil
- 1 c onion, chopped
- 2 cloves of garlic, chopped
- 1/4 c celery, diced
- 1- 15oz can of cannellini beans, drained and washed
- 1 bay leaf
- 2 c chicken broth
- 2 Italian sausages
- 2 stems of kale, removed from the stem and cut into pieces
1. In a pot heat up the vegetable oil. Once hot, add your onions, garlic, and celery, and cook until tender.
2. Add the beans, chicken broth, and bay leaf and simmer for 10 minutes. Then remove from heat.
3. Remove the sausage from its casing, break up, and brown in a frying pan. When cooked through, add the kale. Sauté for a 1 minute. Add the kale and sausage to the soup mixture. Season the soup with salt and pepper. Remove the bay leaf and allow the soup to come to a simmer.
Serve with the bread of your choice. You can also sprinkle on some parmesan cheese on top.
