Sausage, Kale, and White Bean soup

After a very indulgent weekend, I could really use this white bean, kale, and sausage soup to help me get back on track!


*Recipe*

  • 2 T olive oil

  • 1 large onion, finely chopped

  • 1 bay leaf

  • 2 cloves of garlic, finely chopped

  • 2 stalks of celery, finely chopped

  • 1 can of white beans

  • 4 cups of chicken broth

  • 4 oz. of italian sausage

  • 2 leaves of kale, destemmed and finely chopped

  • salt and pepper to taste

  1. In a pot, heat up the olive oil. Once hot, add the onions, bay leaf, garlic, and celery and cook until the onions are translucent.

  2. Drain a can of white beans and add to the pot along with 4 cups of chicken broth. Season with salt and pepper and let it simmer for 10-15 mins. Then add the chopped kale and turn off the heat. The kale will wilt in the hot soup

  3. In a pan, brown your sausage. Drain the sausage and place on a paper towel and then add to your soup.

Garnish with freshly grated parmesan cheese and serve with a side of toasted bread
