a Berry Crumbly Pie

I always buy berries in the hopes that I’ll make myself a healthy smoothie or even just take the time to eat them as is, but rarely does that happen. However this time I made a mixed berry crumble pie! Full disclosure: the pie crust was store bought but the crumble was all me! And it was ah-mazing!

*Recipe* •Crumble - 1/4 cup sugar - 1 t baking powder -1 1/2 c flour - pinch of salt - 1/2 c unsalted butter - 1 egg - 1/2 t vanilla extract •Berry Filling - 3-4 c chopped fresh berries - 1/2 c sugar - 4 t cornstarch - 1/2 t vanilla extract - juice of a half a lemon • Cook pie crust according to instructions • Pre-heat oven to 375°F • Combine all your crumble ingredients with a hand or stand mixer on low speed until mixture is crumbly. Keep in the fridge while you make the filling. • Combine all filling ingredients in a sauce pan and mix gently on low heat for 3-4 mins until well combined. • Spread your filling over your crust and then evenly spread your crumble on top • Bake for about 40 mins or until the top is a nice golden brown. Let it cool before cutting and serving with a scoop of vanilla ice cream.

This recipe is so easy yet SO delicious. Don’t let your berries go to waste!
