Apple Pie

You are the apple of my pie.


Bake the world a better place!


*Recipe*

- 2 1/2 c + 2 T All-purpose flour, divided

- 1 t + 1/2 t salt, divided

- 3/4 c cold butter, cubed

- 8 T ice cold water

- 2 1/2 lbs. sweet apples (gala, fuji, macintosh, braeburn)

- 1/2 c sugar

- 1 t cinnamon

- 1/4 t nutmeg

- juice of half a lemon

- 1 egg, beaten


1. In a bowl mix the 2 1/2 c flour and 1 t salt. Add the cold butter and with a fork or in a food processor, mash until you get pea sized chunks. Add the cold water and mix just until the dough somewhat comes together. Place the dough on a piece of cling film and wrap it up. Refrigerate for 2 hours


2. Peel and cut the apples into slices and add to a large bowl. To it add the sugar, 2 T flour, 1/2 t salt, cinnamon, nutmeg, and lemon juice. Mix together and set aside.


3. Dust your working surface with flour. Take your dough out of the fridge and remove the cling film. Divide into half. Roll it out a 1/8 in. thick. Roll the dough around your rolling pin and place into a 9 in. pie dish. Cut off the extra dough hanging off the sides. Pour your apple mixture into pie dish and repeat with the other half of the dough. Crimp the edges with a fork or press down with your fingers. Pierce the center of the pie with a sharp knife to create venting. cover the top of the pie with egg wash.


4. Bake for 1 hour in a 375F preheated oven for 1 hour.


Allow to cool and then serve with a scoop of vanilla ice cream.
