Fattoush Salad

Ever go out to eat and taste something that you just can’t get out of your head?? Either you go back there repeatedly or are like me and don’t rest until you can recreate it at home! A year ago I went to a party and had this AH-MAZING fattoush salad, yes a salad, with this tangy sumac dressing and I have been trying ever since then to get it just right. Not only is this salad delicious but it’s filling too! I added some homemade pita chips but you can add some grilled chicken and make it a complete meal. I’m telling you people, this is no ordinary salad. It's going to change your life.
*Recipe*
Salad
- 1 heart of Romaine lettuce, chopped
- 1 English cucumber, chopped
- 1 small purple onion, thinly sliced
- 3 Roma tomatoes, chopped
- 1/2 c chopped parsley
- 1/4 c chopped mint
- 5 spring onions, chopped
-2 loaves of fresh pita bread
Dressing
- 2 cloves of garlic
- juice of 2 lemons
- 1 t sumac
- salt to taste
- 1/2 t black pepper
- 1 t dijon mustard
- 1/3 c olive oil
1. In a mortar and pestle, smash your garlic with a generous pinch of sea salt.
2. To a small mason jar, add your smashed garlic, olive oil, lemon juice, mustard, and black pepper. Put on the jar and shake until it is all combined.
3. For your pita chips, chop your pita bread into small squares. Drizzle on 1 T of olive oil and toss until evenly coated. You can fry or bake these for a few minutes until crispy. I decided to airfry them to get that crispy crunch texture and keep it healthier. Once done, sprinkle on some sea salt and toss.
4. Add all your chopped veggies and pita chips to a large bowl and drizzle the salad dressing over it. Toss until evenly coated.
If you want to make this into a complete meal, you can add some grilled chicken or baked garbanzo beans for protein.
