French Apple Cake

We’ve all heard the phrase “one bad apple spoils the bunch.” This phrase is typically used in reference to people. But I don’t think it means to exclude the one for the sake of the bunch. Each one is equally valuable. In the parable Jesus told, doesn’t the shepherd leave the 99 in search for the one lost? (Luke 15:4) When someone we know has strayed towards a path we know isn’t good for them, should we not also go out in search for them just as Christ seeks us and calls out to us when we get lost? I completely forgot about the apples my friend gave me. When I opened the bag up, I saw one had started to spoil, so I scooped them up just in time to make this French apple cake. *Recipe* - 3/4 c flour - 3/4 t baking powder - Pinch of salt - 4 apples mix variety - 3 large eggs room temp - 1/2 c sugar - 2 T brandy or dark rum - 1 t vanilla - 8 T butter melted and cooled to room temp . . • Preheat oven to 350°. • Butter a 9 in. cake pan and dust it with flour. • Sift your flour, baking powder, and salt. • Peel and core your apples and cut them into 1 in. pieces. Pour the juice of half a lemon on top to prevent them from browning. • In a large bowl, beat eggs until foamy and then whisk in the sugar, rum, and vanilla. • Whisk in half of the flour mixture and half the butter. • Then repeat adding little bits of both until both are done. • Fold in the apples gently until they are covered with batter and pour into your cake pan. Smooth out the top. • Bake for 1 hour. Let the cake cool for 5 mins. Dust the cake with powdered sugar, cut, and serve!
