Anyone else read the Sunday funnies? I like to save them for the midweek lull. Even with memes and GIFs on our phones, there’s something special about holding a newspaper and reading your favorite comics like Garfield and Dennis the Menace! Do you think God has a sense of humor? As man is created in His image, He surely must! For some instances in your life, there is just no other explanation. Fries and laughter? Simply no better combination. So munch away without the guilt with these oven-baked sweet potato fries!
*Recipe* - 1 medium sweet potato/person - 1 T cornstarch - 1/2 t paprika - 1 T vegetable oil - 1/2 t garlic powder - fresh or dried parsley to garnish - 1/2 t salt
• Pre-heat oven to 425 • Peel and slice your sweet potato into the shape of fries. Try to cut into equal sizes so they cook evenly. Wipe off any excess moisture with a kitchen towel. • In a bowl, toss your potatoes and cornstarch. Then add your oil and toss. And then add your garlic powder and paprika and toss again. DO NOT salt until the end. Salt draws out moisture. • Place your fries on a greased baking sheet without overcrowding. Too close and they’ll steam rather than crisp. Bake for 15 mins, flip your potatoes, and bake for another 15 mins. I like to broil on low for 5 mins to ensure peak crispiness 😎 • Sprinkle on your salt and parsley and serve as is or with sauce of your choice.
