French Madeleines

Snow on the ground. Warmth in my heart. I really dislike being out when it snows. However, I could sit for hours just watching the snow fall. A cup of tea and a plate of madeleines make for the perfect companions!
*Recipe* - 3 eggs, room temp - 2/3 c granulated sugar - 1 t lemon juice - Zest of 1 lemon - 1 t vanilla extract

- 1 c flour - 1 t baking powder - 1/4 t salt - 6 T melted unsalted butter - Powdered sugar (optional)
* In a bowl beat the eggs and sugar until the eggs are frothy and pale in color * To it add the lemon zest and juice, and vanilla extract. * Sift the flour, salt, and paling powder into your eggs and fold the mixture. * Lastly add the melted butter and gently mix * Cover the batter and let it rest in the fridge for at least 2 hours * Pre-heat oven to 350° * Take your Madeline pan and with a pastry brush coat it with a bit of melted butter. Fill each well just 3/4 of the way. No need to spread it. Gravity and the baking process will take care of that. * Bake in the oven on the middle tray for about 11-13 mins. You should end up with classic “hump” on the center of your cake/cookie. * Take out of oven and let cool in the tray until cool enough to handle. Once cooled, with a butter knife turn them out, sprinkle some powdered, and serve with a cup of tea! These are best eaten on the same day, but they can be stored for about 3 days in an airtight container.
