Homemade Pistachio Ice Cream

I can feel it. Summer is on its way out. The early mornings and late evenings are colder. And the leaves are already starting to change colors. I wish there was a way to hold onto it a little longer. Just a few more BBQs, a few more bike rides, a few more nights out on the patio, please. I want to make sure I relish in the last of the summer weather so I made this INSANELY delicious pistachio ice cream! It doesn’t require very many ingredients or a fancy ice cream maker!
*Recipe*
- 2 c Heavy cream
- 1/2 c pistachios, shelled
- 1 c condensed milk
- vanilla
1. Add your pistachio to a blender and blend to a coarse powder. To it add the 1 c condensed milk and blend until you get a smooth paste.
2. In a chilled, glass or steel bowl, whip the heavy cream until thick, fluffy, and have stiff peaks.
3. Gently fold in the pistachio cream into the whipped cream until it is well incorporated.
4. Pour your mixture into a freezer safe dish. Sprinkle on some crushed pistachio on top if you like. Cover with plastic wrap and keep in the freezer overnight.
5. Leave out for a few minutes before you scoop and serve.
