Peach Cobbler

Making the most of this peach season with the most perfect peach cobbler!

Filling
- 5 large peaches, pitted and sliced
- 3 T turbinado sugar
- 2 T white sugar
- 1 T flour
- 1/2 t cinnamon
- 1/4 t nutmeg
- 1/4 t salt
- 2 T lemon juice
- 2 T water
Topping
- 1 1/4 c flour
- 1 T white sugar
- 1/2 t salt
- 1 T baking powder
- 9 T cold butter, cut into cubes
- 2/3 c heavy cream
- 1 egg, room temperature
- 2-3 T turbinado sugar for topping
1. Pre-heat your oven to 450 F
2. Cut peaches into even slices and add them to a large bowl, leaving the skin on. That’s where all the vitamins and minerals lie. And it’s just easier this way.
3. To the peaches, add the sugars, flour, cinnamon, nutmeg, salt, lemon juice, and water.
4. Using your hands, because they are indeed the best tools, toss your peaches making sure all of them are coated. Spoon into a pie pan, casserole dish, or a cast iron skillet, making an even layer.
5. Bake for 15 minutes. By this time the peaches should be bubbling and beginning to caramelize. If they are not keep them in for a few minutes longer.
6. While the peaches are in the oven, begin your light, biscuit topping.
7. In a large bowl, whisk together the flour, sugar, salt, and baking powder. Now add your cold diced butter and using your hands work the butter into the flour mixture until you get a crumbly mixture that resembles bread crumbs.
8. In a measuring jug, beat your eggs and heavy cream until smooth. Add this egg mixture to your flour and butter and stir with a fork. You’ll be left with a sticky dough.
9. Take your caramelized peaches out of the oven and spoon your biscuit dough on top.
10. Sprinkle some of that turbinado sugar on top. This will form a nice sweet crust on top. Pop back into the oven and bake for another 15 mins.
Serve your peach cobbler with a scoop of vanilla ice cream or some fresh whipped cream on top.
