Pumpkin Soup

Did you know Thanksgiving is next Thursday 😳? If you’re hosting thanksgiving dinner, here’s a great soup to start things off with. Its quick and simple and the perfect start to a festive meal. Plus it’ll hold your guests over while you put finishing touches on your turkey before she’s presented! *Pumpkin Soup Recipe* - 1 can of pumpkin purée (make sure you don’t get pumpkin pie filling) - 3 c Chicken broth or vegetable stock - 1 onion finely chopped - 1 T oil - 1 t ginger finely chopped - 1 t garlic finely chopped - Salt to taste - 1/4 t cayenne pepper - 1 t coconut milk powder (optional

* In a pot heat oil. Once hot add onions, ginger, and garlic and sautée until onions become translucent. * Add in chicken broth and pumpkin purée and mix. Add in your cayenne pepper and coconut milk powder and bring to a simmer and turn off heat. * With a hand blender or regular blender, blend until smooth. *CAUTION* The soup is very hot so please be careful! * Pour the soup through a sieve for an extra smooth soup. Garnish with some heavy cream or full fat coconut cream, black pepper, and cilantro.
