What’s vegan, gluten-free, and tastes amazing? This dish right here! It’s perfect for lunches to school and work. Make a big batch of it for the whole family!
*Quinoa Salad Recipe* - 1 c quinoa dry, cooked = 3 c quinoa - 1 c cucumber finely chopped - 1 c red onion finely chopped - 1 c tomato finely chopped - 1 c bell pepper finely chopped - 1 c cilantro finely chopped - 1 T tahini - 1/2 t salt - freshly cracked black pepper - 1/4 t chili powder - juice of 1 lime - juice and zest of 1 lemon - 1 T water
• Keep in the fridge for a few hours so all the flavors have chance to combine. I was impatient so I had a bowl as soon as I made it!
