Slammin' Salmon

Baked Salmon • Do yourself a favor and buy good quality wild caught salmon unlike what I bought. Taste and health benefits are sure to be better!

*Recipe* - 2 salmon fillets - 1 t olive oil - juice of one lemon - 1 t whole peppercorns - 1 t minced garlic - 1/2 t salt - 1 t Dijon mustard

• Pre-heat oven to 400°F. Combine everything in a ziplock bag and marinate for 20 mins. Place the salmon on a parchment sheet, skin side down. Sprinkle on dried parsley or fresh if you have it. Place a few lemon slices on top and bake until salmon is cooked through; about 12-15 mins depending on your oven. Serve with a side of steamed broccoli and jasmine rice for a meal that’s healthy and easy. Really good for meal prep!
